Recipes for snacks to serve dad on father's day. Some ideas include Individual Pizza Crust, Grape Cocktail Weiners, Mexican Refried Beans Dip, Touchdown Chocolate Bars, Microwave Pizza Submarines, Nutella Pastry, and Quesadilla Con Microwave.
Individual Pizza Crust
- 3/4 c Lukewarm water
- 2 T Sugar
- 1 tb Dry active yeast
- 1 1/2 c Whole-wheat flour
- 1/2 c White flour
- 1/2 ts Salt
- 1 ts Olive oil
- 1/4 c Cornmeal
- Vegetable oil cooking spray
- Pizza Toppings of Choice
In a bowl add the sugar, yeast, flours, and salt. Whisk together then add the water. Knead for about 10 minutes.
Shape the dough into a ball and place it in a large bowl coated with olive oil. Cover with a dishcloth and set aside for about an hour or until the dough has doubled in size.
Preheat the oven to 400 degrees.
On a smooth flat surface sprinkled with cornmeal, roll out the dough until it's about 1/4 inch thick. Use a 5 1/2 inch plate and cut out 8 little pizza crusts.
Place crusts on a well greased baking sheet. Spray the top of the crusts with a little vegetable oil spray.
Bake for about 5 minutes or until golden brown.
Add your choice of pizza toppings and bake for about 10 more minutes.
Pizza Topping Ideas:
- Homemade or storebought pizza sauce
- Lean ground beef.
- BBQ Chicken
- Italian Sausage
- Sliced tomatoes
- Green peppers
- Hot peppers
- Cheeses: Parmesan, Mozzarella, Feta, Cheddar
Pizza topping ideas are only limited by your imagination, so go wild and create the ultimate pizza recipe. I recently tried a pizza that contained only sun-dried tomatoes, roasted garlic, and feta cheese. Sounds simple but I found it excellent.
Grape Cocktail Weiners
- 1 can Cocktail Sauce (Shrimp Cocktail dip type)
- 1/2 jar of grape jelly
- 1 squeezed lime
Cook the cocktail weiners till they're almost done.
Mix together the cocktail sauce, grape jelly and lime and .simmer the weiners in the mixture.
This sounds weird but it comes out tasting REALLY good.
One jar (6oz) Red Currant Jelly and one jar (6oz) of yellow mustard, heated together until smooth. Add cocktail wieners and heat.
Mexican Refried Beans Dip
- 16 oz can Refried Beans
- 3 ea Avacodos*
- 1 c Yogurt
- 1 c Sour Cream
- 1/2 pk Taco Seasoning
- Grated romano Cheese, to taste
- Finely Chopped Tomatoes, to taste
* Mash avocados with lemon juice to prevent darkening.
Layer refried beans on bottom of a quich dish or other flat sided dish.
Then layer the avocados; mix yougurt and sour cream with taco seasoning for next layer.
Top with grated cheese.
Last layer is chopped tomatoes.
Serve with dipping chips.
Touchdown Chocolate Bars
- 1 3/4 c Unsifted flour
- 1 c Sugar
- 1/4 c Hershey's Cocoa
- 1/2 c Cold margarine or butter
- 1 Egg, beaten
- 14 oz can Sweetened Condensed Milk*
- 2 c Hershey's Semi-Sweet Chocolate Chips, divided
- 1 c Chopped nuts
*NOT evaporated milk
Preheat oven to 350'F.
Combine flour, sugar and cocoa, cut in margarine until crumbly. Add egg; mix until well blended.
Reserve 1 1/2 cups crumb mixture. Press remainder evenly on bottom of greased 13x9" baking pan.
Bake 10 minutes.
In saucepan, combine condensed milk and 1 cup Hershey's Chocolate Chips. Over low heat, cook and stir until chips melt and mixture is smooth.
Spread evenly over prepared crust.
Add nuts and remaining 1 cup chocolate chips to reserved crumb mixture; sprinkle evenly over top.
Bake 25-30 minutes or until center is set.
Cool. Cut into bars. Store covered at room temperature.
Microwave Pizza Submarines
- 1 French bread stick
- 1 c Tomato sauce
- 2 ts Dried oregano
- 1 1/2 c Mushrooms; thinly sliced
- 1 Green pepper; chopped
- 2 c Shredded mozzarella
Halve bread lengthwise, cut each half in 3 pieces.
Mix tomato sauce with oregano.
Spread tomato sauce over each piece. Top with mushrooms, then green pepper. Sprinkle with cheese.
Microwave, one at a time on HIGH (100%) for 2 minutes.
Slice a croissant and fill with Nutella, heat at 375 degrees for about 5 minutes and you have a decadant treat.
For those unfamiliar with Nutella, it's simply a chocolate-hazelnut spread.
Quesadilla Con Microwave
Grate thin layer of low-fat cheese evenly over corn tortilla. Microwave one minute - until cheese is bubbly and cheese oil cooks tortilla a little bit (but take out before the tortilla is tough).
Put on some tomato - canned or fresh.
Roll and eat. Surprisingly good.
