Baked Spicy Chicken

Our January-2000 Recipe of the Month is Garvick's Baked Spicy Chicken.
This recipe makes mouth-watering chicken that's just as good cold as it is right out of the oven. For extra-spicy (HOT) chicken try adding as much cayenne pepper as you dare to the recipe.

      Title: Garvick's Baked Spicy Chicken

      Yield: 8 servings
 
      8 ea Chicken drumsticks and/or breasts
    1/2 c  White flour
      1 ea Large egg
    1/2 ts Garlic powder
    1/8 ts Seasoning salt
    1/8 ts Pepper
      1 ts Soya sauce
      1 c  Bread crumbs
      1 c  Whole wheat flour
      1 ts Thyme, dried
      1 ts Basil, dried
      1 ts Oregano, dried
      1 tb Parsley, dried
      1 ts Spike seasoning
 
 Preheat oven to 400 degrees F.

 Arrange 3 flat bowls in a row.

 In the first bowl add the white flour.

 In the second bowl crack in the egg. Add the garlic powder,
  seasoning salt, pepper, soya sauce and whip together.

 In the third bowl place the bread crumbs, whole wheat
 flour, thyme, basil, oregano, parsley, spike seasoning,
 and mix together.
 
 Coat a baking sheet with vegetable spray.

 Dip and thoroughly coat the chicken pieces with the white flour,
 then dip in the egg mixture, and then the breadcrumb mixture.

 Lay out the chicken on a baking sheet. Spray the chicken
 lightly with vegetable oil spray.

 Bake for 50 to 60 minutes (do not turn the chicken).
