Lentil Soup

Our Oct-98 Recipe of the Month is Lentil Soup. This lentil soup is great for a quick meal. Let cool and refrigerate or freeze in appropriate portions. Just put a serving portion in the microwave and heat.


MMMMM----- Recipe via Meal-Master (tm)

     Title: Garvick's Chunky Lentil Soup
Categories: Soup, Beans, Lentil
     Yield: 20 servings

         10 c  Water
          2 c  Lentils
          1 ea Large Onion, chopped
          2 ea Cloves Garlic, chopped
          2 ea Celery stalks, chopped
          2 ea Carrot, chopped
          3 ea Potatoes (Chopped different sizes)
          4 ea Wieners chopped *
          2 T  Bacon Bits
          2 T  Vinegar
          1 x  Salt and Pepper

 * Use European style for better taste.

 Wash 1 1/2 cups lentil well with cold water and drain. Add 7 cups
 water and the 1 1/2 cups of washed lentil to large (5 litre or 6
 quart) saucepan and bring to boil. Add the rest of the ingredients
 except for the spices and bring to boil again. Reduce to lowest
 heat setting and simmer

 Wash last 1/2 cup of lentil in cold water and drain.

 In a smaller second pot add 3 cups of water and the 1/2 cup
 washed lentil. Bring to boil and simmer for 15 minutes.
 Pour into blender and liquify.

 Add the liquified lentil mixture to the large saucepan with the
 other ingredients. Add 2 tablespoons vinegar. Simmer for 3 to 4
 hours. Stir occasionally. Add spices to taste.

 Let lentil soup cool and refrigerate or freeze in appropriate
 portions. This lentil soup is great for a quick meal. Just put
