Grandma's Tasty Beet Salad

Our November-99 Recipe of the Month is Grandma's Tasty Beet Salad.
This recipe is made from scratch, using fresh raw beets. Make sure to pick smaller beets no more than 2 inches in diameter. If the beets are larger, they will need to be simmered for a longer period of time and they don't taste as good as smaller beets. Don't look at me! That's what grandma says. :-)

      Title: Grandma Garvick's Tasty Beet Salad
 Categories: Salads, Beets
      Yield: 6 servings
 
 
      2 lb Raw Beets (2 inch diameter)
           Enough water to cover beets
 
DRESSING:
 
      1 c  Water
      1 tb Sugar
      2 ts Apple Cider Vinegar
    1/2 ts Cinnamon
      1 ts Horseradish (grated)
      1 pn Allspice
      1 pn Ground cloves
 
Place beets in a pot with enough water to cover them.
 
Bring to a boil and simmer for 2-3 hours till beets are
tender.
 
Cool beets under cold running water. Peel off skin and
slice or dice to your preference.
 
Bring 1 Cup of water to boil. Stir in Vinegar and other
spices. Pour hot mixture over beets.
 
Let Cool. Cover and refrigerate.
