Sloppy Lentils

Our July-99 Recipe of the Month is Sloppy Lentils.
This yummy variation of traditional sloppy joes is not only low-fat and healthy, it’s also a fast recipe to make if you’re in a rush.

 
 

MMMMM----- Recipe via Meal-Master (tm) v8.02
 
      Title: Garvick's Sloppy Lentils
 Categories: Main dish, Beans, Tested
      Yield: 6 servings
 
      2 c  Dried lentils
      1 ea Chopped onion
      1 ea Carrot, chopped
      1 ea Green pepper, chopped
      4 c  Water
      5 c  Tomato sauce
      1 T  Parsley flakes
      1 ea Bay leaf
    1/2 t  Basil
    1/4 t  Garlic powder
      1 T  Soy Sauce
 
Place lentils, onions, carrots, and green pepper in a large
pot with 4 cups of water. Cover and simmer for 30 minutes.
 
Add tomato sauce and seasonings to the pot and simmer for
30 minutes longer.
 
Serve over whole wheat bread, muffins, or whole grains.
